Set the Instant Pot to Yogurt mode and high heat. Boil 1 L of milk. In the meantime, prepare an ice bath or cold water in a large container. When the milk has boiled, immerse in the water container. Monitor the temperature with a thermometer and remove when it is under 43 C.
Set the Instant Pot to Yogurt mode. Switch to "Custom" temperature setting and choose a value between 38 C and 43 C.
Place the container in the Instant Pot and set the timer to at least 8 hours (the higher the temperature, the lower the duration). If you want to decrease the sourness, you can ferment it for a shorter duration.
